These recipes are taken from The Geordie Cook Book. I'll not blind you with science but every now and again I'll add a recipe. I'll start you off with a classic! ENJOY.

SHEEP'S HEAD PIE

ingredients:

1 Sheep's head and trotters 1/2lb puff pastry

6oz. cooked bacon pepper, salt and a little powdered mace

2 eggs hard boiled

method:

Scrape, and clean well, the head and trotters. Simmer for two hours slowly. While still warm, remove the bone and cut the meat into small pieces.

Slice the hard boiled eggs and cut up bacon. Place alternately a layer of meat in the bottom of a pie dish, sprinkled with pepper, salt and mace, and a layer of bacon and eggs and repeat this until dish is filled. A cupful of the stock the head was cooked in can be added before covering with puff pastry.

Bake for thirty minutes.

Serve cold with green salad

Okay, just disowned my bro over this one. we got on talking about what we used to eat at home and touched on banana sanwiches. (Which i still luv.) Now as far as I'm concerned there is only one way to eat a 'nana sandwich. You get a slice of bread, squash banana onto it, then fold it over until the banana is oozing out the sides, then you eat it.

But my bro says he puts...ugh....sugar on his...puke, vomit...but worse still margarine...aargh! What a wimp; what a culinary crime. Please tell me others don't do this.

Anybody ever Heard the word 'collops'? There's a very popular, every-day dish here called 'kalops'. It's a kind of beef stew flavoured with Alspice (whole peppercorns only) and Bay-leaves. It usually contains carrots and leeks but these can be omitted. I learned a few Days ago that the Word kalops originates from the English Word collops. When I started researching it I found that the Word collops may originate from the french 'escalope' meaning slice of meat. I also learned that the Word collops was in common use up until the mid 16th Century when it was the generally accepted name for bacon and eggs! However, Another source gives the origin as Scandinavian. In that case it's gone full circle. I personally have never Heard the Word collops in England, though I've eaten my fair share of stews and bacon & egg. Has anybody Heard of collops, and if so what was it?

Just put it in a ceramic pudding basin and cover the top with greased foil tie string around it leaving room for the pud to expand at the top. put in slow cooker with 2 inches of water in the bottom. takes 4 hours or can be left longer, so you can switch on and go to work knowing it will be ready for you getting in.

As I have noticed the shop at Boumersund mentioned in the 'ham sandwich' debate as being the best place for fresh bread, thought you all might like to know the same people - Tino and Jackie - have just opened Tinos deli on Bedlington front street and you can get the freshly made bread there. Directly opposite the 'church apartments' that are next to council offices. (used to be the hearing aid shop!)

I bought more than enough Lidl (the dearer one) 1½ litre apple juice, 78p each.

I put 2 cartons at room temperature in a sterilised demi-john.

The only yeast I had was Wilko's (Youngs) wine yeast.

I included a heaped teaspoon of yeast nutrient, a teaspoon of pectolase and a little squeeze of lemon juice. Plus 2 pound of sugar.

I use a sterilised plain bung so's I can pick it up and give it a damn good shake!

Don't leave the bung in though, unless you like loud bangs! Fit an air lock.

When the initial froth had died down (couple of days) I topped it up with more apple juice (not from the fridge!!!)

It will then go berserk again, so keep a spare, clean air lock ready.

It will ferment a long time and clear beautifully!
