Thanks for that extra info, especially the naming convention for the children.
Having looked at the James and Jess Taylor family, lots of it matches. James is a Joiner, which matches the details as shown on William's marriage certificate. There is also a William Taylor in the 1861 Scottish Census, living in Meigle, Perthshire, the right age and occupation of Joiner (app), living with 2 other apprentices with a Master Joiner. No William living with his parents in that census.
Not many ways to double check the details when you get this far back, but all looks like a great match and certainly something I'm going to investigate as fully as I can.
